Was talking to a glass fibre company near me (they currently make a buggy shell) and they were talking about making a Baja kit if there is enough interest, I know these things do depend on a price, but do you guys think there is demand for a kit? he said he will also make one off's at cost too.

The market is not huge but it is there.
I build/repair/modify a lot of bajas, some for customers, some to sell, and usually have to use second hand bits that need a bit of work. Last week we drove all the way to Stafford to pick some panels up.
The main problem is there are so many kits with subtle differences it can be tricky to make up a set.
If I was of the GRP mentality I would go looking for all the different types, mould them and then advertise full kits or single replacement items as Bajas actually get used and damaged.
Doubt if there is much money in it though, but I for one would buy a few a year.
In fact I can provide 3 different styles of kit if they want to mould...
